2. Heat the butter or oil in a non-stick skillet or frying pan over medium heat. If you're using butter, let it melt and coat the bottom of the pan evenly. If using oil, pour it into the pan and heat until hot but not smoking.
3. Pour the beaten eggs into the pan. They will start to set around the edges almost immediately.
4. Using a spatula, gently push the cooked edges of the egg into the center, allowing the uncooked egg to flow to the edges. Continue this process until the eggs are no longer runny but still slightly moist. This may take about 2-3 minutes.

6. If you prefer a fluffier omelette, you can sprinkle some cheese on top and let it melt, then fold the omelette over the cheese.
